Beef

The Challenge RMF Microwave Thawing System radiates adjustable levels of electromagnetic waves (microwaves) into the stainless-steel drum to quickly and uniformly thaw large blocks of muscle.

In comparison to traditional chilled thawing room methods, our system excels at preserving beef quality by microwaving the entire mass simultaneously rather than from the outside in.

This uniform thawing reduces drip loss and inhibits bacterial growth, while the Meat-on-Meat Massage™ technology works any drippage back into the muscle for full yield. The gentleness of our design protects muscle integrity, allowing it to be used on even the most valuable muscles.

Poultry

Slow or uneven thawing in industrial settings, such as traditional thawing chambers, can leave parts of the poultry within the “danger zone” of bacterial growth. When this temperature inconsistency continues for extended periods—such as the multiple days to temper large-scale batches of meat—that provides an ideal environment for pathogens (like salmonella and campylobacter) to multiply.

When a Challenge RMF Microwave Thawing System reduces days of thawing to just hours, bacteria have little time to “wake up” and start multiplying.

The rotation speed can also be adjusted to prevent damage to poultry muscle or skin.

Pork

The constant massaging action inside our microwave thawing system ensures that your pork product doesn’t suffer any “hot spots.” Our ground-and-polished welds, combined with our helical flight design, don’t cause shearing or tearing.

Instead, the product rolls gently over and over, traveling the length of the drum. It never lingers in the same place, so that the microwave energy spreads throughout the muscle, thawing pork evenly. And due to the much shorter thawing time, the product retains its natural color, texture, flavor, and nutritional value.

Seafood

The dramatically faster thawing time inside a Challenge RMF Microwave Thawing System allows your processing plant to utilize that tempered seafood much more quickly. The rapid, controlled thawing helps retain the seafood’s natural color, texture, and flavor.

The gentleness of the massaging action, combined with full control of drum rotation rates, lets you rapidly thaw even delicate seafood muscles. It also benefits hard-shelled products by rapidly thawing them with minimal impact on the shells themselves.

The enhanced drip loss prevention also ensures this high-value protein retains natural moisture for both product quality and for yield value.

Vegetables

Long processing times for thawing can significantly reduce the quality and texture of vegetables. And though the vegetables have been washed and often irradiated prior to freezing, the process of thawing from the outside to the inside means part of the vegetable mass spends more time above freezing. This can lead to bacterial growth along with color fading/browning.

Instead of cold room thawing or worse—water immersion thawing—our industrial microwave thawing system cuts days to hours, and hours to minutes. This speed lets your processing plant work more on-demand with better quality, improved production efficiency, and more flexible logistics.

Cheeses

The customizable control settings on every Challenge RMF Microwave Thawing System make it suitable for the large-scale tempering and thawing of cheese. The ability to calibrate specific process parameters (frequency, power levels, rotation speed) depending on the type and quantity of cheese you’re thawing avoids localized overheating. This ”hot spot” issue can cause oily or rubbery texture, smearing, and product loss.

Our system avoids all of these issues while also significantly reducing processing time—and ergo the window for bacterial growth. Our closed, hygienic, stainless-steel drums also allow for simplified cleaning and sterilization, so you can quickly start the next product load.

Non-Food Items

Though the Challenge RMF Microwave Thawing Systems claim industry superiority for rapid tempering of food products, their controllable heating and gentle massaging action make them suitable for microwave heating and—in some cases—drying of non-food products.

This can include wood pulp, fabrics, biomass and bio-solids, crumb rubber, chemical formulations, pharmaceuticals, and more. The ground-and-polished welds, combined with the flight design, can create the just-right environment for non-food purposes. Because the drum is made of heavy-gauge stainless steel, it can handle what you throw at it—or in it.
